sourcing select coffees

selecting the right beans is what makes Waterfront a leader in New York coffee scene

We take pride in our high standards and are happy to reject any green coffee that doesn't stand up to scrutiny. Creating a consistent flavor profile starts when we receive our samples, not after.

The ability to purchase coffee is also an art. It requires years of understanding market trends in order to buy green coffee at the right time and price. Many of the small roasters are a slave to their suppliers and pay much higher prices because they only buy a few bags of green coffee at a time. This causes an increase in cost to you. Because of our strong and extensive relationship with global coffee traders, we are able to source the finest coffees at very competitive prices, and pass the savings along to you.

When you are sourcing great coffee the first thing you are looking at are the green beans that come in from the broker. Sometimes those beans are ordered and other times they just send you a sample of something new. Beans of different origins have varying levels of physical makeup with respect to size, moisture content, hardness and taste, and as you look at the green beans you are looking for two main things. First is the shade of green. The best beans will have an emerald green hue. This means they are of high quality and haven't been over-dried. The second thing you want to focus on is the shape and size of the bean. A "good looking" bean is whole and not broken.
